Somali Beef Stew with Cornbread
The Stew
Note! If you are using whole spices, grind them before the start of the video with a coffee grinder or mortar and pestle.
Xawaash Spice Mix
3/4 teaspoon ground cinnamon
1 tablespoon coriander seeds, ground
1 tablespoon cumin seeds, ground (about 1 teaspoon if already ground)
1/4 teaspoon ground black pepper
1/4 teaspoon ground cardamom
3 cloves, ground (1 pinch if already ground)
3/4 teaspoon turmeric
Stew
1 tablespoon olive oil
1 onion
3 cloves garlic
1 to 1.5 pound beef stew meat
1 tablespoon tomato paste
1 roasted red pepper (buy already roasted in a jar)
1/4 teaspoon red pepper flakes (more to taste)
1/4 teaspoon paprika
1 quart low sodium beef broth
1 parsnip
2 carrots
Cornbread
1/2 cup all-purpose flour
1/2 cup whole wheat flour
3/4 cup corn meal
1.5 tablespoon sugar
2.5 teaspoon baking powder
3/4 teaspoon salt
1/4 cup olive oil
2 eggs
1 cup milk
