Texas Caviar on Rye Toast
Equipment
Small pot
Stove
Measuring cups/spoons
Large bowl
Spoon for stirring & serving
Knife/Cutting Board
Jar or small bowl and whisk
Texas Caviar on Rye Toast
1/2 cup extra virgin olive oil
8 large garlic cloves
2 medium tomatoes
1 bell pepper, color of your choice
1 small onion
1 jalepeño
1/2 bunch of cilantro
2 tablespoons vinegar of your choice
1 lemon
salt and pepper
2, 15.5-ounce cans of black-eyed peas (can be found at Walmart or Whole Foods)
Rye or Pumpernickel bread, sliced and toasted (alternate: whole wheat crackers)
