Equipment
Large pan and stove
Measuring cups and spoons
Knife/Cutting Board
something to stir with
oven and cookie sheet
food processor
Berbere Sliders
2 tablespoons olive oil
1/2 large onion
1 portabella mushroom cap
1 tablespoon garlic paste
1 tablespoon berbere spice mix (or half chili powder and half curry powder)
1 tablespoon tomato paste
1/4 cup white wine
1.5 cup or 15 oz can of black-eyed peas (COOKED!)
1 tablespoon low-sodium soy sauce
1/2 lemon, juiced
1 tablespoon molasses or brown sugar
3/4 cup brown rice (COOKED!)
Binding ingredients to have on hand if necessary: eggs, oats, bread crumbs
Quick Collards
1 bunch collard greens
1 tablespoon extra-virgin olive oil
1 tablespoon garlic paste
1/2 lemon, juiced
1/4 cup white wine
To serve
cheese (optional)
