Turkey Carnitas
2 turkey thighs or 3-4 turkey legs
1 quart chicken stock
1 orange
1 onion
1 tablespoon garlic paste or 3 garlic cloves
3 bay leaves
Optional seasonings (add to taste):
2 teaspoons dried thyme
2 teaspoons dried oregano
1 cinnamon stick or 1 teaspoon ground cinnamon
1/4 cup brown sugar
salt
Fajita Veggies
1 tablespoon olive oil
1 onion
2 bell peppers
1/2 tablespoon garlic paste
1/2 teaspoon chili powder
1 teaspoon cumin
cayenne pepper to taste
