Poutine
Poutine is a Canadian dish of French fries topped with gravy and cheese curds. This version uses a variety of colorfully delicious root vegetables for the fries. The roast can be eaten on the side or on top with the gravy and cheese!
Equipment
Measuring cups and spoons
Oven-proof pot and stove
Baking sheet and oven
Sieve
Roast and Gravy
1 to 2 pounds beef or lamb roast
3 tablespoons good-quality curry powder (try Xaawash spice mix)
2 tablespoons olive oil
1 large onion
3 large carrots
3 celery stalks
½ cup white wine
2 tablespoons flour
broth (beef and/or chicken), as needed
Fries
Frozen sweet and/or white potato fries
OPTIONAL: other root vegetables, like carrot or beet, to cut into fries
Low-fat cheese, room temperature (I'll be using shredded)
