Pesto Stir Fry
Equipment
Large pan and stove
Measuring cups and spoons
Knife/Cutting Board
something to stir with
small pot for quinoa or brown rice
Pesto Stir Fry
(pick 5-6 vegetables + bold items)
2 tablespoons olive oil
1/4 cup prepared pesto
1 cup low-sodium chicken or vegetable broth
1 onion, peeled or 1 bunch scallions
3 large carrots
1 bunch asparagus
1 head broccoli
1 bell pepper
1 handful green beans
1 sweet potato
1 pint cherry tomatoes
optional meat: pulled turkey, beef strips, shrimp, etc.
To serve
1 cup quinoa or brown rice
2 cups low-sodium chicken or vegetable stock
1/4 teaspoon salt
