Chicken Ropa Vieja
1 tablespoon olive oil
1 onion, peeled
1.5 tablespoons garlic, minced or paste
1 tablespoon cumin
1 teaspoon oregano
1/4 teaspoon allspice
1, 16-ounce jar roasted red peppers
1/2 cup of dry red wine
1, 15-ounce can crushed tomatoes
2 bay leaves
1, 12.5-ounce can chicken breast
salt and pepper
To serve
carb balance tortillas
reduced-fat, Mexican-style, shredded cheese
fresh spinach
vinaigrette (your favorite or make your own with ingredients below)
juice of one lemon
1 teaspoon apple cider vinegar
1/4 cup extra-virgin olive oil
1 tablespoon honey
salt and pepper
