Fried Rice
(base recipe, add more veggies to your liking
e.g. cherry tomatoes, pineapple, wilted greens)
2 tablespoons low-sodium soy sauce
1/4 cup olive oil, divided
2 eggs
1 onion
1 bell pepper
1 habanero or other hot chile
4 large carrots
1.5 tablespoons minced garlic (can buy in a jar)
1 tablespoon ginger paste
2 cups brown rice COOKED AHEAD OF TIME (can use leftovers)
1 cup frozen peas
