2 tablespoons olive oil
3 pounds boneless chuck roast
1 quart low-sodium or no salt added beef stock
2 tablespoons Worcestershire sauce
1 onion
4 large carrots
salt and pepper
Polenta
2 cups flour
1 quart low-sodium or no salt added chicken stock
1 cup water
1 cup cornmeal
2 tablespoons butter
salt and pepper
Mushroom Gravy
1/2 pound mushrooms
2 tablespoons olive oil
1 onion
dried herbs of your choice
2 teaspoons garlic paste
1/4 cup balsamic vinegar
2 teaspoons flour
1.5 cups low-sodium or no salt added chicken stock
1/2 lemon
