Spaghetti Squash and Mushroom Sauce
1 spaghetti squash (small-ish)
1 pound boneless, skinless chicken thighs (or breasts, as you prefer)
1 onion, peeled
1 jalapeño
1 pound mushrooms (I'll use baby bellas)
4 tablespoons olive oil
2 tablespoons flour
2-3 cups low-sodium chicken stock
1 bunch dinosaur kale
2 tablespoons Parmesan cheese
