1 pound ground turkey, 93% lean, optional
1 medium onion
2 ribs celery
1 bell pepper
2 jalapenos + a spicier pepper if heat is desired
1 tablespoon garlic paste
Two 28-ounce cans of no-salt-added tomatoes (crushed, diced, etc.)
2 teaspoons oregano
2 bay leaves
1/2 tablespoon of cumin
1 tablespoon smoked paprika
1 tablespoon chipotle chili powder
15-ounce can kidney beans
15-ounce can black beans
15 ounces canned or frozen whole-kernel corn
salt and pepper
