Shrimp Tacos
(customizable recipe)
2 cans black beans
1/4 teaspoon cumin
1/4 teaspoon coriander
1/2 teaspoon oregano
1/2 onion, peeled
1.5 tablespoons garlic paste
hot peppers (1 habanero, 2 jalapeño, 2 serrano, etc.)
1 bunch cilantro
2 cups veggie stock
2 large tomatoes
1 Mexican beer
1 lime (plus more for spritzing tacos)
1 can chipotle chiles in adobo sauce
1 cup low-fat sour cream
1/2 pound shrimp (peeled, deveined, tail off)
High-fiber tortillas of your choice (Look for whole-grain, "carb balanced," etc.)
salt and pepper
salad greens of your choice
