Ramen Noodle Soup
(customizable recipe)
1 head baby bok choy
1 package whole-grain noodles
2 tablespoons low-sodium soy sauce
1 tablespoon olive oil
2 boiled eggs
1 bunch scallions (green onions)
4 large carrots
1 tablespoon garlic paste
1 tablespoon ginger paste
4 dry shitake mushrooms, soaked in hot water, or 2 ounces fresh shitake mushrooms
2 tablespoons sake or white wine
1 quart chicken stock
a handful of bean sprouts
