Equipment

• Pot and a heat-proof bowl that fits inside the pot (or double boiler)

• Stove

• Knife 

• Mixer (stand mixer, hand mixer, or a whisk and some muscle)

• measuring cups/spoons

• 1 large bowl, 1 medium bowl, and 1 small bowl

• A medium sieve

• Aluminum foil or parchment paper

• one 9-inch cake pan

• Oven

• 1/2 cup olive oil (plus more for greasing pan)

• 8 ounces 70% cacao chocolate

• 2 avocados (or a big one that will yield 1/2 cup)

• 4 eggs

• 1/2 cup sugar

• 1/4 teaspoon cream of tartar

• cocoa powder, for garnish (optional)
